Chicken Rice (Rice a Roni but better)

Like usual I am always trying to cut out the bad stuff that boxed foods have by making my own creations. My family loves rice so instead of buying Rice a Roni and the like, we are going to make our own. This tastes better and is far more healthier than the boxed stuff.
I see a lot of recipes that call for Spaghetti or Vermicelli broken up in pieces. Well I’ve done this before, the first time and only once. It took forever and was not pleasant at all. I am a busy mother of a bunch of young children and don’t have time for that!
I was in luck…….I came across this cut spaghetti called “Fideo cut spaghetti” and all it is, is broken up spaghetti! YAY ME! No breaking it up and wasting time win-win! Now I am always making stuff in bulk to save me time and money. I can’t find this stuff anywhere near me so I ordered it from Amazon —> “Fideo awesome deal“
Ok now do I want to buy (1) 16 oz box for $7.29 (yes that’s what 1 box was selling for) or do I want to buy a case of (16) 16 oz boxes for $16? Yes $16 for 16 boxes! So I bought a case of course! I am a prime member so I get shipping for free!
I know my pictures aren’t the greatest. I’m just using the camera on my phone because I’m a busy mother that’s usually broke and can’t afford a damn camera that takes super awesome pictures like some I see online lmao! BUT my stuff tastes A-M-A-Z-I-N-G and that’s all that matters right guys!?
Ok enough of my chit chat…let’s move onto the recipe so you can get started on your dinner tonight.
INGREDIENTS:
- 1 cup Fideo cut Spaghetti
- 1 1/2 cup Long Grain Rice
- 4 tsp Chicken bouillon—I use this –> Chicken bouillon *OR* you can use chicken broth, 4 cups instead
- 1/2 tsp Salt (I don’t use salt if I’m using the bouillon)
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/4-1/2 tsp Pepper
- 1/4 tsp Thyme (optional)
- 1 tsp dried Parsley (or add fresh after its cooked)
If you’re making up seasoning packets in bulk like I do, then add all of this stuff together and store in a quart mason jar or ziplock bags.
Ready to cook? Follow these instructions
*In a large pan over medium heat, melt 3 tbsp of butter
*Add the pasta/rice/seasoning mix to the pan and cook until browned about 5 minutes (or add all of that and the water and skip browning it)
*Add 4 cups water and bring to a boil. Once boiling, cover the pan with a lid and lower the temp. Simmer about 15 min or until the liquid is absorbed.
*Fluff with a fork and server
***You can replace the Chicken bouillon for Beef bouillon. My friend added Ham bouillon and said it was really good but I haven’t tried that yet. I would suggest adding dried minced onion for the Beef flavored 🙂
Mess around with the seasonings and see what you like. For a little added heat you could use a little Cayenne or my favorite Cajun!
Mix it up and put it in a jar or layer it and make it look pretty haha! I love using mason jars for stuff like this and with my homemade seasonings and rubs 🙂
